How do I know if an item is being sent via on-demand delivery or courier service?

For items that are available to be delivered via on-demand delivery, there will be a "delivery date" text box in the product page for you to choose the preferred delivery date:
For items that are being sent via courier service - you will not be allowed to select a specific delivery date. Do refer to the product description for the estimated delivery timeframe.
The estimate delivery date can also be checked by inserting the postcode in the "Delivery Information (By Courier)" widget. You will also find the "Express Courier Delivery" icon on the product page:
